Warming Chipotle Ginger Sweet Potato Soup

We’ve had this recipe for Ginger Sweet Potato Soup for a while, but recently, Travis began a love affair with Chipotle peppers in Adobo sauce. I’m not sure why. Regardless, one night he suggested that we add it to this soup, and I had to agree, it took the recipe to a new level, providing just the right amount of kick to make it more interesting. Enjoy!

Ingredients
  1. 1 Tbsp Olive Oil
  2. 1/2 cup yellow Onion, diced
  3. 4 cloves Garlic, chopped
  4. 2 Tbsp Ginger Root
  5. 2 Sweet Potatoes, diced
  6. 5 cups Vegetable Broth
  7. 1/4 cup Orange Juice
  8. 2 Tbsp Chipotle in Adobo Sauce
  9. 1/8 tsp ground Cinnamon
  10. 4 cups Chickpeas
  11. 2 cups Kale, chopped
  12. Salt and Pepper, to taste
Instructions
  1. In a large soup pot, heat the olive oil over medium heat. Add the yellow onion and cook until translucent.
  2. And the garlic and ginger and cook until fragrant, about 30 seconds.
  3. Add the sweet potato, vegetable broth, orange juice, chipotle in adobo and cinnamon. Stir well, and bring to a simmer. Let cook for about 20 minutes, until the sweet potatoes are soft, stirring occasionally.
  4. Add the chickpeas and kale, and cook until the kale has wilted, about 5 minutes. Add salt and pepper to taste.
  5. Serve hot.
