Asian Peanut Dipping Sauce

This Peanut dipping sauce is one of our most versatile go-tos. We use it as a dipping sauce for spring or summer rolls, and sometimes we use it as a base for our Thai Peanut Vegetable Noodle dish. The beauty of this sauce is that it can be used as a companion for many Asian dishes, but contains no fish or shrimp sauce (unlike many American-Thai food these days). A vegan’s dream!

Ingredients
  1. 5 Tbsp Peanut butter, chunky
  2. 2 Tbsp Rice vinegar
  3. 2 Tbsp Lime juice
  4. 2 Tbsp Sesame oil
  5. 1 1/2 Tbsp Maple syrup
  6. 1 1/2 Tbsp Soy sauce (or Tamari)
  7. 4 cloves Garlic
  8. 2 Tbsp Cilantro, finely chopped
  9. 2 Tbsp Ginger root, chopped
  10. 2 tsp Peanuts, crushed
  11. 1/4 tsp Red pepper flakes
Instructions
  1. Combine Peanut butter, Rice vinegar, Lime juice, Sesame oil, Maple syrup and Soy sauce in a mixing bowl, stir until well mixed.
  2. Add Garlic, Ginger root and Red pepper flakes to mixture.
  3. Garnish with Cilantro and Peanuts if using as a dipping sauce, otherwise mix them in if using as a noodle sauce.
